Step 1

Place Abuelita, evaporated milk and sweetened condensed milk in medium saucepan; heat to a boil, stirring frequently.

Step 2

Place egg yolks in medium bowl. While stirring, slowly add about 1 cup of the chocolate mixture to the yolks. Pour egg yolk mixture into chocolate mixture. Cook over low heat, stirring constantly, until mixture thickens. Pour sauce into large glass bowl; keep warm.

Step 3

Place egg whites in large mixer bowl. Beat until soft peaks form. Slowly add powdered sugar and cream of tartar; beat until stiff peaks form.

Step 4

Drop egg white mixture by rounded tablespoon over sauce or pipe using a pastry bag with a jagged tip. Serve sauce and islands in small bowls. Sprinkle with grated chocolate, if desired.
