What is the FDA threshold for gluten in a food labeled as “gluten free”?
Any food that is labeled “gluten free” must contain less than 20 parts per million of gluten. According to the FDA, other countries and international bodies use these same criteria, as most people with celiac disease can tolerate foods with very small amounts of gluten. You can call the FDA for more information on their gluten free standards at this number: 1-888-463-6332
What does 20 parts per million of gluten mean? If I eat more pizza am I at risk of consuming too much gluten?
In defining “gluten free,” FDA did not establish a specific amount of gluten that may trigger an adverse reaction in people who suffer from celiac disease or are otherwise gluten intolerant. Instead, the agency adopted the concentration threshold of less than 20 parts per million (ppm) gluten for food bearing this claim, which is the equivalent of 20 milligrams of gluten in 1 kilogram of food or 40 milligrams of gluten in 2 kilograms of food, etc. Some celiac disease researchers and some epidemiological evidence suggest that most individuals with celiac disease can tolerate variable trace amounts and concentrations of gluten in foods (including levels that are less than 20 ppm gluten) without causing adverse health effects. Therefore, while we can’t provide specific dietary advice to our consumers who have celiac disease or who are otherwise sensitive to gluten – including those who may choose to eat more pizza than others – we can assure that these products meet the FDA requirements for gluten-free foods, which can be tolerated by most people with celiac disease.
