Step 1
Preheat oven to 400° F.
Step 2
Coat a muffin tin with nonstick cooking spray; gently press a wonton wrapper into each muffin cup.
Step 3
Combine egg yolks, evaporated milk, sweetened condensed milk and vanilla extract in a medium mixing bowl and whisk thoroughly. Pour the mixture through a fine mesh strainer to remove any air bubbles.
Step 4
Divide the egg mixture evenly among the muffin cups; place the muffin tin on middle rack of oven. Bake for 10 minutes or until the edges have started to brown.
Step 5
Reduce oven temperature to 350° F and bake for an additional 5 minutes or until the centers are firm and a wooden pick inserted into the center of a tart comes out clean.
Step 6
Remove muffin tin from oven; cool for 5 minutes. Remove tarts from tin and place on wire rack to cool completely. Serve fresh or reheated in the toaster oven.
