Make It
Step 1
Whisk together eggs, water, ½ cup milk, butter, vanilla extract and salt in a large bowl until combined. Gradually whisk in flour until batter is smooth.
Step 2
Spray 6- or 8-inch nonstick skillet with cooking spray. Heat skillet over medium heat. Scoop scant ¼ cup batter onto center of skillet. Tilt skillet in a circular motion, coating the surface evenly with batter. Cook for 1 to 1 ½ minutes or until lightly brown and edges begin to firm. Loosen with spatula; flip and cook other side for 30 seconds. Repeat with remaining batter.
Step 3
Combine dulce de leche and 2 tablespoons milk in a small, microwave-safe bowl. Microwave on HIGH (100%) power for 45 seconds. Stir until combined.
Step 4
Place a crêpe on a serving plate. Place 4 banana slices on one quarter of crêpe. Fold in half and fold in half again. Drizzle with dulce de leche sauce. Sprinkle with pecans and powdered sugar.
