Make It
Step 1
Cut top and bottom off of pineapple. Cut peel off. Cut into 8 rings, about ½-inch-thick. Use a spoon to carve out core and remove.
Step 2
Spray large grill pan or outdoor grill with nonstick cooking spray and heat over medium heat. Grill pineapple rings for 2 to 3 minutes on each side until browned and grill marks appear.
Step 3
Place 1 pineapple ring on each plate. Top with ¼ cup ice cream and about 2 teaspoons dulce de leche.
