Step 1
Place one cake round in bottom of a glass trifle bowl that is 8 to 10 inches in diameter. Poke holes in cake with round handle of wooden spoon or wooden skewer.
Step 2
Whisk together sweetened condensed milk, coconut milk and evaporated milk in medium bowl. Grate lime peel over tres leches; stir.
Step 3
Pour half of the tres leches sauce over the cake, allowing sauce to soak in. Top with half of the whipped cream. Sprinkle with half of the mango.
Step 4
Top with second cake. Poke holes in cake. Pour remaining tres leches sauce over cake, allowing sauce to soak in. Spread remaining whipped cream over cake. Sprinkle remaining mango over cake. Refrigerate for 2 hours.
Step 5
Sprinkle with toasted coconut before serving.
