Step 1
Place eggs in a small saucepan; add water to just cover eggs. Bring the water to a boil. Once boiling, boil eggs for 12 minutes. Remove eggs from the boiling water and place in cold or ice water to stop the cooking. Peel the eggs and set aside.
Step 2
Place the avocado in a bowl and mash it with a fork. Add mayonnaise, lemon juice and 1/4 teaspoon bouillon. Chop 4 of the 5 boiled eggs and add to the mixture. Mix well.
Step 3
Place avocado and egg mixture on toasted bread. Cut the remaining egg into slices or quarters and place over mixture. Sprinkle with remaining 1/4 teaspoon bouillon.
