Make It

Step 1

Place bouillon mixture in a medium saucepan; bring to a boil over high heat.

Step 2

Add quinoa to the broth; cook for 20 minutes or until tender. Remove from heat; drain in a strainer and set aside.

Step 3

Heat oil in a large skillet over high heat for 3 minutes; add onion and cook, stirring frequently, for 2 minutes. Add garlic and mushrooms; cook, stirring occasionally, for 3 minutes. Add wine; cook for 1 minute. Remove from heat; sprinkle with parsley.

Step 4

Stir in cooked quinoa, tomatoes and media crema.

Step 5

Serve topped with Parmesan cheese.
