Step 1
Mix coconut milk and curry paste in a large saucepan over medium heat; cook for 5 minutes. Add chicken and water; cook for 5 more minutes until boiling.
Step 2
Add carrot, Maggi chicken soup mix, ginger and lemon juice; cook for 7 more minutes over low heat.
Step 3
Add rice noodles and cook until soft.
Step 4
Add chives and soybean germ; stir and remove from heat. Serve immediately.
