MAKE IT
Step 1
Pierce potatoes with tines of a fork a few times; rub with oil. Place on microwave-safe plate; microwave on HIGH (100%) power, turning and rotating halfway through, for 10 to 12 minutes or until soft.
Step 2
Cut potatoes in half lengthwise. Scoop out potato flesh into a medium bowl, leaving the skins intact. Mash potatoes with potato masher or fork; stir in media crema, pesto, cheese, salt and pepper. Stuff mixture back into potato skins. Place on baking sheet.
Step 3
Bake at 350° F for 25 to 30 minutes or until golden brown. Sprinkle with green onions. Sprinkle with additional cheese, if desired.
