Ingredients
- ●2 tablespoons extra virgin olive oil
- ●2 tablespoons fresh lime juice
- ●1 tablespoon fresh orange juice
- ●1/4 teaspoon grated fresh lime peel
- ●1/4 teaspoon grated fresh orange peel
- ●1/4 teaspoon kosher salt
- ●Freshly ground black pepper (optional)
- ●1/2 teaspoon anise seeds, crushed (optional)
- ●2 cups fresh blueberries
- ●1 fennel bulb, trimmed, halved vertically, cored and cut into very thin slices (optional)
- ●1 cantaloupe, halved, peeled and cut into 1/4-inch-thick wedges
- ●1/4 cup fresh mint, coarsely chopped
Make It
Step 1
Whisk together oil, lime juice, orange juice, lime peel, orange peel, salt, pepper and anise seeds in a medium bowl. Add pepper to taste.
Step 2
Add blueberries, fennel and mint to the bowl and gently toss to coat.
Step 3
Overlap melon slices on a serving tray. Spoon the blueberry mixture down the center of the melon slices.
