- ●3 to 4 thin slices avocado
- ●2 to 3 fresh jalapeño slices
- ●Cilantro sprigs
- ●2 tablespoons chopped tomato
- ●2 tablespoons chopped roasted butternut squash or sweet potato
- ●½ lime
- ●1 to 2 teaspoons toasted pepitas
- ●Radishes
Make It
Step 1
Prepare beans & rice according to package directions; stir. Transfer to a small bowl.
Step 2
Top with avocado, jalapeño, cilantro, tomato and squash. Squeeze with lime juice. Sprinkle with pepitas. Top with sliced radishes, if desired.
