Step 1
Preheat oven to 400° F. Spray a 9 x 5-inch loaf pan with nonstick cooking spray.
Step 2
Combine onion, oats, ¼ cup enchilada sauce, jalapeños, bouillon, coffee granules, egg and cilantro in a large bowl. Add ground turkey; mix well. Place in prepared loaf pan. Cover with remaining ¾ cup enchilada sauce.
Step 3
Bake for 45 minutes or until no longer pink in center. Let stand for 10 to 15 minutes before serving.
Control the spice factor on your meatloaf! To make it mild, remove all jalapeño seeds. For a spicier meatloaf, leave in some seeds. Also, for flavor variations use ground beef or ground chicken.
